Equipment

Ingredients

  • 160 grams flour (about 1 cup)
  • 2 medium eggs
  • 75 grams sugar (1/4 cup, heaping)
  • 4 ml vanilla extract (1 teapoon)
  • 75 grams yogurt (1/3 cup)
  • 75 ml olive oil (1/4 cup)
  • 2 medium apples, peeled, cored and chopped
  • 7 grams cocoa powder (1 tablespoon)
  • 4 grams baking powder (1 teaspoon)
  • 4 grams baking soda (1 teaspoon)
  • butter, for greasing (optional)
  • powdered sugar, for serving (optional)

Instructions

  • Preheat your oven to 180°C (350°F) and prepare your cake pan by lining it with parchment paper or greasing it lightly with butter.
  • Sift and mix all the dry ingredients in a bowl: flour, baking soda, baking powder, and cocoa powder.
  • Mix eggs and sugar in a separate bowl until you get a creamy texture.
  • Add yogurt, olive oil, and vanilla extract, and continue mixing.
  • Add the strained dry ingredients and mix, just enough to combine.
  • Add the apple bits --- do not overmix.
  • Pour your chocolate apple cake batter into the prepared pan and use an angled spatula to level the top gently.
  • Tap the pan on the counter to remove any remaining bubbles.
  • Place your cake pan in the middle of the oven for about forty minutes or when a toothpick comes out clean when inserted into the cake.
  • Remove from the oven and set aside for a few minutes to cool.
  • Transfer your chocolate apple cake to a serving plate.
  • Sprinkle with powdered sugar (if preferred) --- slice and enjoy!

Notes

  • Cook’s Tip:  Remember to strain the dry ingredients, especially the cocoa powder.  It ensures that you don’t get lumps on the batter of your chocolate apple cake.
