- 2 pounds beets (about 1 kilo)
- 2 teaspoons oil
- 1 teaspoon dried parsley
- salt and pepper, to season
Preheat your air fryer to 200°C (375°F).
Peel the beets and chop them into identical sizes.
Combine the chopped beets, oil, parsley, salt, and pepper in a large bowl.
Mix all the ingredients evenly.
Place the seasoned beets into the air fryer basket.
Keep some space in between to help them cook quicker.
After 5 minutes of cooking, shake the basket to roast the beets evenly on all sides.
Continue cooking for about 13 to 15 more minutes, or until the beets turn soft --- shaking the basket regularly.
Transfer your roasted beets into plates.
Serve, and garnish with some sea salt or fresh parsley, if preferred.
