Creamy Mushroom Asparagus Pasta Recipe

Deliciously creamy and ready in less than 30 minutes.  That's what you get with every serving of Creamy Mushroom and Asparagus Pasta.  A complete meal on one plate!

Equipment

Ingredients

  • 5 ounces pasta
  • 2 & 1/2 tbsp olive oil
  • 1 medium shallot, sliced thinly
  • 1 cup mushrooms, sliced thinly
  • 1 cup asparagus (about 12 stalks), chopped thinly
  • 1/4 tsp dried parsley
  • 1/2 cup cream
  • salt and pepper, for seasoning
  • fresh parsley, for serving (optional)
  • parmesan, for serving (optional)

Instructions

  • Use a large pan to heat olive oil over medium-high heat.
  • Once it's ready, add shallots and cook until they turned soft.
  • Add mushrooms and mix.
  • Cover pan with a lid and cook until the mushrooms are halfway cooked.
  • Adjust heat to medium, then add asparagus, salt, pepper, and dried parsley.
  • Mix, cover, and cook until the asparagus are almost cooked.
  • Add cream and mix.
  • Cover and let everything simmer for about two minutes.
  • Taste and adjust seasoning by adding salt and pepper.
  • Add the separately cooked pasta, then mix to combine.
  • Take the pan off the heat and transfer asparagus mushroom pasta into plates.
  • Serve, with some grated parmesan, or chopped fresh parsley, if desired. 

Notes

  • Cook's Tip #1: The sauce for this asparagus mushroom pasta takes about twenty-three minutes to cook, so time it accordingly when you should start cooking your pasta.  Alternatively, just start with the boiling of the water and keep it simmering but hold off on adding the pasta until it's the right time.
  • Cook's Tip #2: Make sure you slice the shallots, mushrooms, and asparagus thinly.  The thickness of the ingredients will change the time required to cook them.
  • Cook's Tip #3:  Start the seasoning when you add the asparagus, then just build up and adjust in the last stages of cooking the sauce.
