Ingredients
- Asparagus - you can use either thick or thin asparagus for this asparagus pasta; you can adjust the thinness anyway when you chop them.
- Penne - I find that tubular pasta shapes are better for this recipe. It makes it easier to get everything in your fork for a bite.
- Mushrooms - no need to use fancy ones, a regular champignon is excellent for this creamy pasta recipe. I strongly suggest getting them fresh, though, not the canned ones.
- Shallot - you can use white onions if that's what you like, but you would need to cook them longer.
- Olive oil - extra virgin olive oil, if possible.
- Dried parsley - feel free to use fresh ones, of course, if that's what you have on hand.
- Cream - you can use light cream (half & half) or heavy cream (double cream). For reference, I use heavy cream in this recipe.
- Salt & ground black pepper - for seasoning; use it during the cooking of the asparagus and once the cream has been added and combined --- before adding the pasta.
Preparation
Start by heating olive oil in a large pan over medium-high heat.
Once the oil is ready, add shallots and cook until they turn soft.
Add chopped mushrooms (photo 1).
Mix, cover the pan with a lid, and cook until the mushrooms are halfway cooked.
Adjust heat to medium, add asparagus, salt, pepper, and dried parsley (photo 2).
Mix, cover, and cook until the asparagus are almost cooked.
Add cream (photo 3).
Cover and let everything simmer for about two minutes.
Taste and adjust seasoning by adding salt and pepper.
Add the cooked pasta, then mix to combine (photo 4).
Take the pan off the heat and transfer mushroom asparagus pasta into plates.
Serve, with grated cheese, or roughly chopped fresh parsley, if desired.
Helpful tips
- The sauce for this mushroom asparagus pasta takes about twenty-three minutes to cook, so time it accordingly when you should start cooking your pasta. Alternatively, start with the boiling of the water and keep it simmering but hold off on adding the pasta until it's the right time.
- Make sure you slice the shallots, mushrooms, and the asparagus thinly. The thickness of the ingredients will change the time required to cook them.
- Start the seasoning when you add the asparagus, then just build up and adjust in the last stages of your sauce's cooking.
Recipe variation
- Herbs. You can add more herbs in this asparagus pasta if you prefer; dried or fresh ones will be fine.
- Different pasta shapes. You can use any type or shape of pasta that you want, but personally, I think this type of sauce is best suited for tubular pasta shapes.
