- 430 grams flour (about 2 & 3/4 cups)
- 1 & 1/4 teaspoons yeast
- 4 tablespoons olive oil, plus more for brushing the tins
- 2 teaspoons sugar
- 1 teaspoon salt
- 1 teaspoon dried mint
- 2 teaspoons dried basil
- 1/2 teaspoon dried oregano
- 1/2 teaspoon dried thyme
- 1/2 teaspoon garlic powder
Combine yeast with a cup of warm water and set aside until ready.
Mix the flour, sugar, dried herbs, salt, and garlic powder in a stand mixer bowl or a regular mixing bowl if kneading by hand.
Add the olive oil and the yeast mixture; then mix (and knead) until you get a smooth dough.
Form the herb bread dough into a ball and place it into an oiled bowl.
Cover with a clean kitchen cloth and set aside until it doubles in size (typically an hour and a half).
Brush (or wipe) the muffin tray lightly with olive oil.
Deflate the dough and divide it into twelve portions.
Form a ball for each portion and place them on a muffin tray.
Use the same cloth to cover and set aside for about thirty minutes --- or until they puff up a bit.
Preheat the oven to 180°C (350°F).
Once the oven is ready, place your herb dinner rolls in the middle for twenty to twenty-five minutes or until they turn slightly golden in color.
Transfer to the cooling rack for a few minutes --- then enjoy!
