Herb Bread Rolls Recipe

Ingredients

  • 430 grams flour (about 2 & 3/4 cups)
  • 1 & 1/4 teaspoons yeast
  • 4 tablespoons olive oil, plus more for brushing the tins
  • 2 teaspoons sugar
  • 1 teaspoon salt
  • 1 teaspoon dried mint
  • 2 teaspoons dried basil
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon garlic powder

Instructions

  • Combine yeast with a cup of warm water and set aside until ready.
  • Mix the flour, sugar, dried herbs, salt, and garlic powder in a stand mixer bowl or a regular mixing bowl if kneading by hand.
  • Add the olive oil and the yeast mixture; then mix (and knead) until you get a smooth dough.
  • Form the herb bread dough into a ball and place it into an oiled bowl.
  • Cover with a clean kitchen cloth and set aside until it doubles in size (typically an hour and a half).
  • Brush (or wipe) the muffin tray lightly with olive oil.
  • Deflate the dough and divide it into twelve portions.
  • Form a ball for each portion and place them on a muffin tray.
  • Use the same cloth to cover and set aside for about thirty minutes --- or until they puff up a bit.
  • Preheat the oven to 180°C (350°F).
  • Once the oven is ready, place your herb dinner rolls in the middle for twenty to twenty-five minutes or until they turn slightly golden in color.
  • Transfer to the cooling rack for a few minutes --- then enjoy!

Notes

  • Cook's Tip:  Ensure you place the freshly baked d rolls into a cooling rack as soon as they're out of the oven --- to avoid getting soggy.
