These herb bread rolls are also called 'herb dinner rolls' because they are perfect for dinner dishes like stews or other savory servings.
The blend of dried herbs in each soft bread roll gives it that tempting aroma even before you take your first bite.

Ingredients
- Flour - you only need all-purpose flour to make these herb dinner rolls.
- Olive oil - extra virgin olive oil, if possible.
- Sugar - regular granulated sugar will work well.
- Yeast - I always use active dry yeast for this herb bread recipe.
- Dried herbs - basil, mint, thyme and oregano
- Seasonings - salt and garlic powder
How to make herb dinner rolls
Start by combining yeast with a cup of warm water, then set aside until it becomes foamy.
Combine and mix the flour, sugar, dried herbs, salt, and garlic powder in a stand mixer bowl or a regular mixing bowl if kneading by hand.
Pour the olive oil and the yeast mixture.
Mix and knead until you get a smooth dough.
Form the herb bread dough into a ball and place it into an oiled bowl.
Cover with a clean kitchen cloth and set aside until it doubles in size (typically an hour and a half).
Brush (or wipe) the muffin tray lightly with olive oil.
Deflate the dough and divide it into twelve portions.
Form a ball for each portion and place them on a muffin tray.
Use the same kitchen cloth to cover and set aside for about thirty minutes --- or until they puff up a bit.
Preheat the oven to 180°C (350°F).
Once the oven is ready, place your herb dinner rolls in the middle for twenty to twenty-five minutes or until they turn slightly golden in color.
Transfer to the cooling rack for a few minutes --- then serve!
Helpful tips
- It's not a sticky dough, so it's easy to handle, and using a stand-mixer is not required --- kneading by hand is absolutely fine.
- Transfer the herb rolls to a cooling rack as soon as they're out of the oven --- to avoid the bottom getting soggy.
Recipe variation
- Herbs. Play around with the kinds and quantities of the dried herbs, and use other types you prefer over what I've indicated in this bread recipe.
- Shape of the rolls. You can skip the muffin tins and just place the balls directly on a baking tray lined with parchment paper. Keep some space in between so they don't touch once they've proofed and baked --- you will have perfectly round herb dinner rolls instead.
