Equipment

  • Chopping board
  • Kitchen knife
  • Measuring cups
  • Measuring spoons
  • Wok

Ingredients

  • 3 pieces kielbasa (3/4 to 1 cup when chopped), chopped
  • 1 to 2 cloves garlic, thinly sliced
  • 4 cups cooked rice (3/4 cup uncooked), separated
  • 1/2 cup frozen corn, heaping
  • 1/2 cup carrots, chopped into small dice
  • 1 to 2 teaspoons light soy sauce
  • 2 to 3 pieces green onions, roughly chopped
  • salt and pepper, to season

Instructions

  • Place the chopped kielbasa in a cold wok or skillet and place it over medium-high heat.
  • Cook until oil comes out, and they turn brown on the edges.
  • Lower the heat to medium and add the garlic.
  • Cook until the garlic becomes fragrant, then add the carrot and corn.
  • Adjust the heat to high and mix for about four minutes to cook the vegetables.
  • Add the separated rice, soy sauce, salt, and ground black pepper.
  • Mix to combine everything evenly and cook for about five minutes --- taste and adjust the seasoning accordingly.
  • Add some of the chopped green onions and the kielbasa from earlier.
  • Mix, then take it off the heat.
  • Transfer your kielbasa fried rice into plates, sprinkle with the remaining green onions --- and serve!

Notes

  • Cook's Tip #1:  Use cooked rice that is at least a day old. The drier it is, the better it is for making fried rice with kielbasa.
  • Cook's Tip #2:  Add some vegetable oil if there's too little left from frying the kielbasa.
  • Refer to the post's 'Recipe Variation' section for substitutions.
