Large pan (or skillet)
- 7 to 8 strips bacon, chopped into 1/2-inch wide
- 1 to 2 cloves garlic, minced
- 1 small onion, chopped finely
- 500 grams gnocchi (about 1 pound)
- 3/4 cup mix of green peas and corn, frozen
- 1/4 to 1/2 teaspoon allspice powder
- 1/2 teaspoon dried parsley
- pinch of salt
Put the chopped bacon on a cold pan or skillet ---- and place it over medium-high heat.
Cook until they become crispy, remove from the pan, and set aside. (Note: Mix often to avoid burning them.) Leave two tablespoons of the bacon oil, then saute the onion and garlic until they soften.
Add the allspice and salt and mix for a minute.
Add the frozen corn and peas and cook for a couple of minutes.
Add the gnocchi and let cook for ten to twelve minutes. Lower the heat and mix often to ensure nothing sticks at the bottom of the skillet.
Once the gnocchi are soft and cooked, add the dried parsley and the crunchy bacon --- mix, taste, and adjust the seasoning.
Remove your pan-fried gnocchi with bacon and peas from the heat and transfer to plates.
Garnish with fresh herbs, if preferred --- then serve!

Cook’s Tip: If there’s not enough bacon oil left for sauteing, feel free to add some olive oil.
