Delicious roasted potatoes with crunchy edges and subtle flavors from the herbs ---that's what you'll get from these Air Fryer Baby Potatoes. The best part? They are ready in less than 10 minutes!
Roasted baby potatoes in air fryer --- once you try it, you will not cook them any other way.
They're generally healthier because there's barely any oil in them, just enough to give them those crunchy bits everyone loves.
If you're not a fan of oregano or parsley, use the herbs you prefer or skip them altogether --- you will still get a delicious plate of roasted small potatoes!

Ingredients
- Baby potatoes - scrubbed, rinsed, and drained.
- Herbs - I typically use dried parsley and oregano when making these air fryer baby potatoes.
- Seasoning - paprika, salt, and ground black pepper.
- Olive oil - very little; just enough to coat the potatoes. It's the secret to getting those crispy edges in your roasted baby potatoes.
Preparation
Start preparing your air fryer baby potatoes by making sure all the small potatoes are (almost) the same size --- I generally chop those that are bigger than one inch into halves.
Combine the potatoes, olive oil, herbs, paprika, salt, and pepper (photo 1).
Preheat the air fryer to 200°C (375 °F) for five minutes.
Place the seasoned potatoes into the air fryer basket (photo 2).
After four minutes, shake the basket or use a tong with silicone to turn the baby potatoes over (photo 3).
Continue cooking for about four to five more minutes, or when the small potatoes are soft and nicely browned on the edges.
Transfer your air fryer small potatoes into plates.
Sprinkle with some sea salt or fresh parsley, if desired --- then serve.
Helpful tips
- Do not skip the preheating of the air fryer, even if the instruction manual indicates that it's not necessary.
- You can spray your baby potatoes with oil directly instead of combining it with herbs and spices.
- Feel free to use your favorite dried herbs --- thyme and rosemary are also excellent options.
- Dried herbs are better for these air fryer small potatoes than the fresh ones because they are less likely to burn in the air fryer.
